My Favourite Summer Recipes!

Summertime is my favourite time of year (though really, there isn’t a season I don’t love!)– the sun and heat, late summer nights, beach days and gardening, camping, hiking, and the food and drinks– I love it all!

And I don’t know about you, but I feel like there are certain recipes that were created just for summertime, and once fall rolls around they’re off the table until next year! So here they are, some of my favourite summer recipes (in no particular order):

Three-Bean Salad

  • 1 can green beans, drained
  • 1 can yellow (wax) beans, drained
  • 1 can red kidney beans, drained
  • 1/2 cup white sugar
  • 1/3 cup white vinegar
  • 1/3 cup vegetable oil

Combine the beans in a large bowl. Blend sugar, vinegar, and oil until completely emulsified. Pour wet mixture over beans, stir, and refrigerate before eating. (We like it best if the beans have a day to soak beforehand!)

Ambrosia Salad

  • 1 can crushed pineapples, drained
  • 2 cans mandarin oranges, drained
  • 3/4 bag of mini marshmallows
  • 1 small container sour cream

Combine all ingredients in a bowl, and refrigerate for at least an hour before eating. (I know a lot of people like to add shredded coconut to their salad, but Koen doesn’t like it, so I don’t!)

Homemade Burgers

  • 1 lbs lean ground beef
  • 1/2 small yellow onion, finely diced
  • 2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tsp Worcestershire sauce
  • 2 tsp hot sauce
  • 1 egg yolk

Combine all ingredients in a bowl. Form into patties and BBQ! We like to brush them with BBQ sauce while they cook.

Grapefruit Frozen Margaritas

  • 1 can margarita mix, thawed (you can find it in the frozen juice section at the grocery store)
  • 2 cups grapefruit juice
  • 1/4 cup pineapple syrup
  • 1 cup vodka
  • Ice cubes

Combine margarita mix, grapefruit juice, pineapple syrup, and vodka in a jug. When you’re ready for a drink, fill your glass with ice cubes, and top up with the boozy mixture. Then dump it into the blender and blend! (Usually I make my margaritas with tequila, but the night I threw these together I was out! I substituted vodka, and it stuck!)

With fall around the corner (seriously, how did that happen?!), I’ll be making these recipes as much as possible in the next few weeks! If you give any of them a try, let me know how it turns out!
